No Bake Energy Bites

Ingredients

  • 1 cup (dry) oatmeal
  • 2/3 cup coconut flakes
  • 1⁄2 cup peanut butter
  • 1⁄2 cup ground flaxseed
  • 1⁄2 cup chocolate chips
  • 1/3 cup honey
  • 1 tbsp. chia seeds
  • 1 tsp. Vanilla extract

Instructions

Makes about 15 energy “bites” (Approximately 190 calories per “bite”)

  • Mix all ingredients together and refrigerate for about 1⁄2 hour.
  • Roll into small balls about 1 inch in size.
  • Store in air tight container in fridge.
